
SJM hosts pizza workshop for Macau’s F&B management students to elevate culinary skills of local talents
SJM Resorts, S.A. (“SJM”) invited more than 20 Food & Beverage Management students and lecturers from the Faculty of Hospitality and Tourism Management of Macau University of Science and Technology (“MUST”) on 6 May 2022 to learn the art of making pizza with Chef Maurizio Ferrini, Pizzaiolo of Casa Don Alfonso at Grand Lisboa Hotel.
Famed for crafting Macau’s finest and most authentic Neapolitano pizzas, Chef Maurizio shared his pizza-making techniques, using responsibly produced and the finest organic ingredients from the Don Alfonso farm in Italy. He demonstrated to the F&B Management Year 2 to Year 4 students how pizzas are fired to perfection in less than 3 minutes, using a traditional style custom-built oven at temperature of up to 1,000°F. He also explained the importance of balancing the crust type with the right amount of toppings. Upon learning Chef Maurizio’s secrets, the MUST students put their newly acquired knowledge to use and made their very own pizzas. Chef Maurizio also shared his insights and philosophy in the art of culinary, as well as some of the challenges in handling doughs under Macau’s humidity when he first arrived Macau. The MUST students were encouraged to ask questions and learn as much as they could during in the session with the renowned Italian chef.
